For Alain Ducasse, this project was born out of his passion to take on the world of coffee with the same drive for excellence that guides him in cooking. His dedication to genuine, authentic produce shows itself in the coffees’ flavours and the aromas, as well as in the service. These high standards guide every step so as to always offer the best in tasting: coffee version “haute cuisine”.
Conceived by Patrick Laforgue (Atelier Laforgue & Laforgue, Biarritz), La Manufacture de café offers an industrial feel, as if to reintroduce a bit of the manufacturing activity that has since been forgotten back into the city. A veritable place of conviviality, the bay windows reveal the production area to visitors. A coffee roaster has been set up in the entrance and the coffee is roasted there every day. The enchanting aromas of roasted beans generously spread down Saint-Sabin Street.
Veda Viraswami, who placed third in the roasting world championships, is the roaster for Le Café Alain Ducasse. Mixing science and magic, he finds the perfect balance in roasting coffee crus for the desired taste.
Between the roasted coffee bean and the cup is the savoir-faire of our cafeliers. They combine a perfect coffee extraction technique and a maître d’hôtel’s sense of service — convivial and irreproachable.
Simply observing the cafelier’s fascinating choreography as he prepares the beverage is enough to dive into the world of coffee. The confident and precise movements echo those of the manual coffee bean picker or the coffee roaster who watches over the color transformation of the green coffee bean. As the cafelier serves the coffee, a beautiful story is told. Coffee is celebrated not only by tasting it, but also by taking a moment out of time to share.
At La Manufacture, we build close ties with our producers and establish lasting and respectful relationships with them. We work with small farms with sustainable production and involved in processes attentive to the workers and their environment, they commit to follow our quality standards. The coffee produced at La Manufacture is the result of mutual respect and work around the love of the produce.
