In Yemen, coffee is cultivated today as it has been for the last 500 years — on arid mountainside terraces exposed to the winds using traditional techniques. Among the Yemenite crus are the most ancient coffee varieties, cultivated almost nowhere else, including our chosen Udaini. The Ruwad Coop Al Hayma, aka "the farm with two climates", produces a grand coffee, delicate and sophisticated.
For a gentle extraction, first steep the coffee in a small amount of water for 30 seconds before pouring in the remaining hot water. This 2-step infusion will allow this coffee to reveal all its potential.
